Asparagus & Strawberries - a dream team

May and June, fresh green, herbs in abundance, asparagus, strawberries, rhubarb – culinary the best time of the year. While asparagus was always associated with smoked ham and hollandaise sauce, asparagus is popular with us today as a salad or crunchy roasted. And the combination of salmon, asparagus, strawberries, pine nuts and fine oil is just gorgeous.

Salmon fillet with roasted asparagus and strawberries

(serves 4)

350 g strawberries
cut into thick slices
1 kg asparagus
peel, cut diagonally into pieces, fry in some olive oil in a grill pan for 3-4 minutes
800 g salmon fillet without skin
fry in hot olive oil over medium heat 3-5 minutes (depending on the thickness of the fillet), salt and pepper
½ bunch of spring onions, in rings
add at the end of the roasting time of the fish, just for one minute
arrange asparagus, salmon and strawberries on plates
1 lime, peel abrasion or zest
4 TS Parmesan cheese, grated
2 TS pine nuts, roasted without fat
coarse sea salt, Szechuan pepper from the mill
sprinkle on the dish
4 TS olive oil
4 ts raspberry vinegar
sprinkle with 1 TS olive oil and 1 ts raspberry vinegar each plate, serve
