Chicken skewers with peach and pepper relish

The recipe has what it takes to become this summer’s favorite recipe! Finely marinated chicken skewers glazed with honey and a fruity relish made from peach, bell pepper and spring onions. That suits a warm summer evening!

Chicken skewers with peach and pepper relish

We love this recipe since the kids were little. It’s just fun to nibble on the little chicken skewers and spoon the fruity relish.

The chicken skewers can be fried in the pan. Of course, they taste very good from the charcoal grill – and so this dish enriches every barbecue party. The skewers are waiting in the marinade and the relish can be prepared very well. Furthermore, the recipe is very simple. That‘s how it‘s done:

Chicken skewers with peach and pepper relish

(4 servings)

short wooden skewers
drain in oil so that the meat dissolves better after cooking
3 TS light soy sauce
1 TS liquid honey
stir into a marinade
600 - 800 g chicken breast fillet
cut lengthways into wafer-thin slices, put them in a wavy shape on the skewers and drizzle with the honey-soy marinade, marinate for at least 30 minutes, turning occasionally
2 peaches (or nectarines)
dice very small
4 spring onions
cut into fine rings
1 red pepper
dice very finely, mix peaches, onions and peppers
1 TS liquid honey
heat in a pan, add the peach mix, simmer for approx. 2 minutes on low heat, stirring, deglaze with
2 TS white wine vinegar
salt
3 TS chopped flat parsley
salt the relish and fold in the flat parsley
3 TS of oil
fry the chicken skewers in hot oil for around 4-5 minutes until golden brown or cook on the grill, and serve with the peach and pepper relish
baguette bread goes with it

The other day we were invited for a barbecue with dear friends. They served a super-tasty tomato bread. As a matter of course, I immediately asked for the recipe, of course!
