I like to use the organic lemon mayonnaise from the manufacturer “Münchner Kindl”. For more than hundred years, they have been producing exquisite mustard varieties, mayonnaises and other fine sauces. I discovered this brand on the Viktualienmarkt in Munich, where the Münchner Kindl has its origin. You can also get the products in well-stocked supermarkets or online.

Black salsify with blood orange hollandaise
Even if spring is in the starting blocks, there are still no local vegetables available. Until the first home-grown asparagus is on our plates, it will take a while – at least for us in the north of Germany. Fortunately, there is the wrongly misunderstood and a little forgotten „winter asparagus“. According to the motto „rough shell – delicious core“ I show you today a recipe for salsify baked in the oven with a blood orange hollandaise.

Health food magazine „Schrot & Korn“ [whole grain & corn] made a competition in their September issue: Topic was the use of old or stale bread. The authors of the two best recipes had been invited to visit this year’s book fair in Frankfurt to cook their recipes in the show kitchen of the „Gourmet Gallery“ together with bio-leading chef Christian Kolb. I won this trip with my recipe of an onion bread soup!
