Almond cookies with chocolate icing

(Preheat oven to 175°C)

2 egg whites
200 g marzipan raw mass
stir together until a smooth mixture is formed
100g sugar
1 P vanilla sugar
let it trickle in
50 g wheat flour
add and stir in too
place the dough in a piping bag with a smooth nozzle and pipe croissants or strips onto a baking tray lined with baking paper
50 g sliced almonds
sprinkle over the cookies
bake the pastries at 175°C for approx. 10 – 15 minutes, let cool
100 g dark chocolate couverture
roughly chop with a large knife, let it melt in a water bath, stirring so that the chocolate doesn't stick
dip half of the almond crescents into the chocolate coating and place them on a rack to dry
