Hamburg Brown Biscuits for 3rd Advent

The advent dream of my childhood: the original Hamburg Brown Biscuits. In my grandma’s recipe book in grain and lot, today it is more feasible in grams and teaspoons – my favourite pastries for Christmas! The photo is some years old. Then, our children stamped names on the cookies – a nice idea as a small Christmas gift.

Hamburg Brown Biscuits

(yields about 60 pieces)

125 g sugar beet molasses

125 g sugar

125 g butter

heat the syrup with the sugar until the sugar has dissolved, add the butter gradually, stir

275 g flour

1 ts backing soda

sieve flour and baking soda on top of the cooled molasses mixture

2 ts cinnamon

1 ts gingerbread spice

1/2 ts grated lemon peel

1/2 ts grated orange peel

add all spices, knead, if the dough should be too firm, add some water

roll out the dough thinly and cut out any forms

bake 7-9 minutes at 200 ° C

My favourite gingerbread spice is „Klingenberger Lebkuchengewürz“ manufactured by „Altes Gewürzamt“ in Klingenberg/Germany. I am definitely fond of their spices. The gingerbread spice is well-balanced and besides Christmas pastries I use it to season meat dishes with it as for example a wild boar goulash or roast beef – delicous!
